I love this time of year. I will be sad when it feels too warm outside for soup ( I hear you can have this one cold). I had potato leek soup when I was much younger and didn’t know what a leek was. I thought, how extravagant, and never thought I would make it.
This soup I think is one of my favorites. I was looking for a little something different for my lentil soup and this is it. The soup was inspired by a Deborah Madison recipe in Vegetarian Cooking for Everyone, Red Lentil Soup with Lime. This is much simpler than the original recipe and is vegan and fatfree.
I LOVE minestrone soup! I have not had it in years and the weather turned cold, so I just had to try and make it. I want to be accurate about measurements but sometimes I get carried away and forget to write it down. So here is what I recall. I added sauteed onions and garlic cloves, vegetable broth and diced tomatoes in a pot.
