Today’s lunch was super yummy. Poking around on vegan blogs last night, I saw a few recipes for quesadillas. So today I decided to give it a try. We had some corn tortillas in the fridge (fat and flour free) so I put one on our nonstick skillet to brown 1 side and then spread refried black beans, corn, salsa and cilantro on the browned side.
I put another tortilla (also browned on the inside) on the top and placed the whole thing in the nonstick skillet, pressing down with the spatula, until both sides were brown and crispy. I then transferred it to a plate, cut it with a pizza cutter and garnished it with more salsa and cilantro. It was really good (and extremely easy). The only thing I plan to do differently next time is to add some seasoning to the beans so it’s a little more flavorful. Perhaps some cumin, chile powder, garlic powder, onion powder, and seasoned salt. It would also be nice served with a wedge of lime.
Some vegan recipes use cheese substitutes (often homemade cheese-like sauces) while others just focus on alternative ingredients. The ones I made today were really good, but sort of ordinary. I think it would be super fun to experiment with other kinds of ingredients. I’ll report back if I stumble on any great quesadilla discoveries. What I like to do is enhanced a jar of salsa with chopped grape tomatoes, cilantro & fresh lime juice. Then I mix that into the refried beans. Serve extra salsa on the side of the quesadilla but frankly it usually doesn’t need it. Delicioso!
